THE festive period is not all about picky bits you can serve visitors at home . . . but they’re pretty important.
Check out these cheap and easy bites that you can serve over the coming days.
LITTLE FISH DISH: Raid your freezer for some fish fingers and peas to make this easy idea from Young’s.
Pop a few fish fingers in the oven and while they’re cooking, boil a kettle and pop 400g of frozen peas in a bowl.
Pour the hot water over the peas to defrost them and after a few minutes, drain them and pop the peas in a blender with four tablespoons of double cream.
Whizz until smooth, then toast some slices of white bread and spread a layer of the pea puree over the top. Cut into neat, bite-sized squares.
When the fish fingers are cooked, cut them into small chunks that will fit on the toast and smash on with a fork.
MINI SPUDS: Make a load of delicious mini jacket potatoes with this recipe from Tesco Real Food, which works out at just 48p a serving.
Start by pricking 750g of baby potatoes with a fork and tossing them in oil and a sprinkle of sea salt before laying on a large roasting tray and baking for around an hour until soft and golden.
At the same time, cook three rashers of streaky bacon until crunchy then finely chop them.
When the potatoes are ready, cut a cross into the top of each one. When cooled slightly, fill with a teaspoon of cream cheese and sprinkle the bacon over the top.
MINCE PUFFS: These sweet treats will bring festive joy to any party.
Roll out a sheet of ready-made puff pastry and cut it into small, equally sized squares.
Pop them on some baking paper then use a teaspoon to press a light circle in each square.
Scoop on enough mincemeat to cover the middle of the square.
Brush the edges of the pastry with a beaten egg then bake for around ten minutes until golden brown.
